Make carrots blend in for a carrot cake recipe.

It's easy to cook and then puree carrots to the texture you need in no time. These are a good fit to your diet.
And, the carrots do not need to be shredded. It is not labor intensive and this whole process takes less than 15 minutes.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Microwave or vegetable steamer
  • Plastic wrap (if no steamer or cover); you can use steamer bags from Ziploc (follow directions)
  • Fresh baby carrots (they should not have white on them, but look bright orange and have moisture on them)
  • Blender or food processor(to get to puree consistency)
  • Storage container or bag (if not using right away)
  1. Step 1

Place a small bag of baby carrots in steamer and follow directions on steamer for carrots. If not using a steamer, place carrots in microwavable glass casserole dish or bowl with 1/4 cup water and cover with plastic wrap (if no cover).

  2. Step 2

Microwave for about 7-9 minutes (test with fork, should be very soft but not shriveled). Stop after 6 minutes to check, as microwaves vary.

  3. Step 3

Place carrots and water into a blender or food processor and puree. You may have to stop and mix/pulse to gather up mixture from the bottom.

  4. Step 4

Ensure carrots are well blended and there are no chunks.

Let cool. You are now ready to add the puree mix to your carrot cake batter. Enjoy!

Tips & Warnings
  • Use a baby food grinder, alternatively, after you've steamed your vegetables.
  • Puree/blend until you achieve desired consistency. It may take a few attempts.
  • You can use this to make other vegetable purees as well and add them to your recipes for added moisture, flavor and nutrition.
  • Prepare and puree ahead of time, (consider a double batch) and freeze carrot puree for later use.
  • Be cautious, as steam burns; use hot pads/oven mitts.
