How to Make Easy Salmon Croquettes

Salmon croquettes, also known as salmon cakes, have long been a component of classic Southern cuisine. When enjoyed hot out of the frying pan, these tasty treats create plenty of satisfied smiles and requests for seconds. Canned salmon makes for easy preparation, and goes well with a variety of vegetables, herbs and seasonings

    Things You'll Need

    • 1 12-ounce can of pink salmon
    • 2 eggs
    • 2 tablespoons of yellow cornmeal
    • 1/4 cup chopped onion
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • Large bowl
    • 1 large spoon or potato masher
    • 1/4 cup flour
    • Cooking oil
    • Frying pan
    • Spatula or pancake turner
    • Serving plate
    • Paper towels
      • 1

        Combine the salmon, eggs, cornmeal, onion, salt and pepper in a large bowl. Mix the ingredients thoroughly with a large spoon or potato masher.

        Add the flour to the mixture a little at a time to get the desired consistency. You may end up needing less than 1/4 cup.

        Form the mixture into small patties, similar to hamburger patties.

        Pour enough cooking oil into a frying pan to coat it evenly and preheat it over medium heat.

        Place the patties into the frying pan very gently. Put in as many as you can, but leave for flipping.

        Cook the patties on one side until browned. Turn them over with a spatula to brown the other side.

        Remove the patties from the frying pan and place them on a plate lined with a paper towel to soak up excess oil. Serve the salmon croquettes hot.
