Things You'll Need:
- 1 onion
- 1 red or yellow bell pepper
- Good quality extra virgin olive oil
- 1 clove garlic
- 1/4 teaspoon oregano
- 1/4 teaspoon cayenne pepper
- 2/3 cup red wine
- 1 26 oz. box tomatoes (preferred) or one 28 oz. can tomatoes
- 1 teaspoon salt
- Pepper, to taste
- 1 pound total fish. I use cod with a few rock shrimp thrown in most of the time. It's up to you--whatever's fresh and good.
- Nice crusty bread

Step 1
Saute 1 chopped onion and 1 red or yellow bell pepper in 1/4 cup olive oil for 5 minutes over low heat.

Add 1 clove minced garlic and 1/4 teaspoon each oregano and cayenne pepper and saute for 5 more minutes.

Add 2/3 cup red wine, increase heat, and cook until wine is reduced a bit (several minutes).

Add one 28 oz. can tomatoes (or one 26 oz. box ), chopped, and 1 teaspoon salt and some pepper to taste. Bring to a simmer and simmer for ten minutes.

Add 1 pound fish, cut into bite-size pieces. Cook without stirring for five minutes.

Serve with bread, and more olive oil drizzled on top.
