How to Make a Hearty Fish Stew

This fish stew recipe will feed two really hungry people or four moderately hungry people. It is easy, scrumptious, filling.

Instructions

Things You'll Need:

  • 1 onion
  • 1 red or yellow bell pepper
  • Good quality extra virgin olive oil
  • 1 clove garlic
  • 1/4 teaspoon oregano
  • 1/4 teaspoon cayenne pepper
  • 2/3 cup red wine
  • 1 26 oz. box tomatoes (preferred) or one 28 oz. can tomatoes
  • 1 teaspoon salt
  • Pepper, to taste
  • 1 pound total fish. I use cod with a few rock shrimp thrown in most of the time. It's up to you--whatever's fresh and good.
  • Nice crusty bread

    How to Make a Hearty Fish Stew

  1. Step 1

    Saute 1 chopped onion and 1 red or yellow bell pepper in 1/4 cup olive oil for 5 minutes over low heat.

  2. Step 2

    Add 1 clove minced garlic and 1/4 teaspoon each oregano and cayenne pepper and saute for 5 more minutes.

  3. Step 3

    Add 2/3 cup red wine, increase heat, and cook until wine is reduced a bit (several minutes).

  4. Step 4

    Add one 28 oz. can tomatoes (or one 26 oz. box ), chopped, and 1 teaspoon salt and some pepper to taste. Bring to a simmer and simmer for ten minutes.

  5. Step 5

    Add 1 pound fish, cut into bite-size pieces. Cook without stirring for five minutes.

  6. Step 6

    Serve with bread, and more olive oil drizzled on top.

Tips & Warnings
  • Any kind of fish is great in this, so pick whatever kind you like.
  • Do not cook the fish for more than five minutes at the end. If you do, you'll ruin the stew.
