How to make a Sausage Beef Casserole

I was visiting my Aunt and Uncle last Labor Day and my Aunt had made this dish that I thought was amazingly delicous. I hope you think so, too.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 6 sweet italian sausages (at 1lb)
  • 1lb beef chuck, cut in 1" cubes
  • 1 lg onion, sliced
  • 2 med cloves garlic, minced
  • 2 med. green peppers, cut in strips
  • 4 med. potatoes, quartered
  • 2 cans kidney beans, drained
  • 1 teaspoon basil
  • pinch of salt and pepper
  • 2 beef bouillon cubes in 1 cup boiling water
Step1
In heavy skillet brown sausages well. Cut in 1" pieces and place in 3qt casserole.
Drain fat from skillet, reserving 2 tablespoons. Brown beef in 1 tablespoon fat, then put in casserole.
Step2
Cook onion, garlic and peppers in remaining fat. Turn into casserole. Add potatoes and beans. Sprinkle with seasonings and mix lightly.
Step3
Add bouillon, cover and bake 1 hour and 15 minutes at 350 degrees.
