How to Make Steak Balmoral

Steak Balmoral is a classic steak prepared in true Scottish tradition, complete with whiskey, cream and mushrooms. It's a popular dish across the UK, but is found at almost every restaurant in Scotland. If you're looking for a unique way to prepare your steak, try these steps for a simple way to enjoy Steak Balmoral.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 4 Angus steaks
  • 4 tbs. Scotch whiskey
  • 1 cup double cream
  • ½ cup fresh beef stock
  • ¼ cup sliced mushrooms
  • 1 tbs. fresh butter
  • 1 tsp. mustard
  • ¼ tsp. salt
  • ¼ tsp. pepper
Step1
Prepare the steaks. Lightly fry the steaks in a pan with butter. Make sure steaks are lightly browned and crisp on each side, then set aside.
Step2
Add the whiskey to the pan and light it to create a big flame.
Step3
Pour in the cream, beef stock and mushrooms and return pan to stove. Bring to a boil.
Step4
Simmer sauce and steaks for at least 10 minutes, until the sauce has reduced to half its volume.
Step5
Continue stirring on low heat, ensuring sauce does not burn.
Step6
Remove from heat and let cool approximately 5 minutes before serving.

Tips & Warnings

  • Sauce will thicken as it stands.
  • Serve with Yorkshire pudding or fresh bread rolls.
  • Stand back when lighting the whiskey; the flame can shoot up very quickly!
