How to Use Leftover Turkey

Anyone who has entertained over the holidays has had to deal with the big old turkey carcass sitting there in the refrigerator with just enough meat on it to keep it from just getting chucked out for the alley cats! Here is a list of ideas for using up that carcass quickly and creatively!

Instructions
  1. Step 1

    Turkey Shortcake: Cut the cooked chicken into pieces and reheat it in the leftover gravy. Now cut open a biscuit and pour over the meat and gravy mixture. Top with the top of the biscuit and serve with a fork and knife.

  2. Step 2

    Mock Shepherd's Pie: Layer leftover turkey, stuffing and gravy in a casserole dish. Top with whipped mashed potatoes, and sprinkle with melted butter. Bake for about 20 minutes or until golden brown.

  3. Step 3

    Turkey Breakfast: Chop up leftover turkey, stuffing and mashed potatoes. Fry together in a cast-iron skillet. Serve with a poached egg on top.

  4. Step 4

    Turkey Soup Bread Bowl: Chop turkey and add to leftover gravy, mixing in enough milk to make it a soup. Heat and pour into hollowed-out "bread bowl." Serve at once.

  5. Step 5

    Bobbies: Slice a hoagie roll in half. Spread with mayonnaise. Add sliced turkey, stuffing and cranberry sauce. Close and enjoy!
