How to Make Tasty Healing Greens with Miso Dressing

Dark leafy vegetables are indeed great for you, packing a power-punch of cancer-fighting antioxidants, but did you know they can actually be delicious, too? Here's how to cook greens with miso dressing.

Instructions

Things You'll Need:

  • 1 C onions, cut into thin slices
  • 1 Tbs.toasted-sesame oil
  • 1 C red bell pepper, seeds removed
  • 4 C stemmed kale, sliced
  • 4 C Napa cabbage or bok choy
  • 1 Tbs. natural soy sauce
  • 1/4 C white miso
  • 2 Tbs. tahini
  • 1/4 C fresh lemon juice
  • 1 Tbs.honey
  • 2 tsp. fresh dill, chopped
  • 1/2 tsp. turmeric
  • 1 large pan
  • 1 medium-sized bowl
  1. Step 1

    In a large pan saute the onions in the sesame oil over medium-high heat for 5 minutes.

  2. Step 2

    Add the red pepper and saute for 3 minutes.

  3. Step 3

    Add the kale and 1/3 cup water. Cook until the liquid has evaporated.

  4. Step 4

    Add the soy sauce, cabbage, and 1/3 cup water. Cook until the greens are soft, about 5 minutes.

  5. Step 5

    To make the miso dressing, stir the miso and tahini together in a bowl. Add the lemon juice and water and mix thoroughly. Stir in the remaining ingredients.

  6. Step 6

    Pour the dressing over the greens and enjoy!
