Difficulty: Moderately Easy
Things You’ll Need:
- 2 cups of water
- 1/2 cup or cornmeal
- 1/2 tsp. salt
- 2 tsp. butter
- 1/4 cup flour
Step1
Bring the water and salt to a boil.
Step2
Whisk in the cornmeal in a steady stream.
Step3
Stir with a wooden spoon until it thickens.
Step4
Pour it into a greased loaf pan and chill overnight.
Step5
Cut into 1/2 inch slices and dredge in flour.
Step6
Brown on both sides in a saute pan with the butter, over low heat for about 10 minutes each.
Step7
Serve with syrup and sausage.

on 4/18/2008 I had the pleasure of hosting my 75 year old uncle for a month recently. He talked fondly of this meal. So I surprised him. I bought a 1950's gristmill at a garage sale for $20. Then found the only place I could buy whole dried corn & wheat in the area, a feed store. Fresh ground my flour and made this dish for him. :-) He loved it, I loved it, and it only cost $0.07 for both meal and flour. I had reservations of buying the corn at a feed store until I spoke with somebody who used to buy feed directly from the same grain silo that a major health food company bought from.
50 lb dried corn: $12.10 ($0.08/ dry cup)
50 lb whole wheat $14.60 ($0.09/dry cup)
