How to Clarify Fat

Now this might seem like a strange topic in light of our society trying to cut down on the use of saturated animal fat! There are, however, many people who still do not want to waste leftover bacon fat or goose drippings. If used properly, these are an essential part of kitchen life.

Difficulty: Easy
Instructions

Things You'll Need:

  • fat drippings
  • raw potato
  • cheese cloth
  1. Step 1
     

    Cook the meat until enough fat has collected in the collection pan. Bacon is great for this as it becomes the crispiest if it is roasted on a rack over a pan, instead of on the pan directly.

  2. Step 2
     

    Allow the drippings to cool slightly so you don't fry your fingers!

  3. Step 3
     

    Strain the fat through several layers of cheesecloth to remove any large particles.

  4. Step 4
     

    Now add a few slices of raw potato and heat until the potato is well browned.

  5. Step 5

    Strain again through the cheese cloth and store in a covered container in a cool place.

Tips & Warnings
  • Bacon drippings can be a wonderful addition to a dish of roasted potatoes - just use them sparingly!
  • If the fat smokes at any time, don't bother saving it.
