How to Make a Swiss Chicken Quiche

A ham and cheese quiche is a terrific standby, but if you really want to make a splash at the dinner table you need to mix things up. A good alternative is the Swiss chicken quiche. Does this Spark an idea?

Things You'll Need

  • 4 oz. Swiss cheese, sliced
  • 1 1/2 cups cooked chicken
  • 1 standard pie crust (9 inches)
  • 1 cup milk
  • 3 eggs
  • 2 tbsp. flour
  • 2 tbsp. pimento, finely chopped
  • 1/2 tsp. of salt
  • 1/4 tsp. marjoram

      Bake the pie crust in the oven for about 10 minutes at 425 degrees. Since the quiche itself is very moist, this will firm the crust.

      Remove the pie crust from the oven and reduce the oven temperature to 350 degrees.

      Place a layer of cheese followed by a layer of chicken in the crust, spread evenly over the surface of the crust.

      Mix the eggs, milk and seasonings in a large bowl.

      Add the flour to the egg mixture slowly so that it doesn't clump. Add it in stages, thoroughly mixing one portion before adding another.

      Pour the wet mixture over the chicken and cheese already in the crust. Pour slowly and allow the mixture to fill in the spaces in the chicken and cheese layer.

      Place the quiche uncovered into the oven to bake for 30 to 40 minutes or until fully cooked. Poking the center of the quiche with a knife and having it come out clean is the best way to determine if the quiche is done.

Tips & Warnings

  • Feel free to use prepackaged chicken when you make a Swiss chicken quiche. Prepackaged chicken that is made for salads can work if it's plain, but it can taste dry.

  • Be sure that you fully cook the chicken in advance. You can make your chicken the night before if you want, or even use leftover cooked chicken.
