You can make a quiche with almost any kind of ingredient imaginable. Seafood, for example, can make an incredible quiche. The cocktail quiche recipe presented here is easy to make, but has some very fancy flavors incorporated.

Difficulty: Easy
Instructions

Things You'll Need:

  • 6 oz. crab meat
  • 6 oz. shrimp, shelled and de-veined
  • 1/2 up mayonnaise
  • 2 tbsp. all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1 standard size pie crust (9 inches)
  • 8 oz. swiss cheese
  • 1/4 cup scallions (onions can substitute)
  1. Step 1

Mix the wet ingredients together (mayonnaise, eggs, milk) and blend until fully incorporated.

  2. Step 2

Add the flour into the egg mixture very slowly. Make sure each time you add more flour it fully incorporates so as to avoid lumps in the mixture.

  3. Step 3

Stir in the rest of the ingredients slowly until they are evenly distributed in the mixture. Add salt and pepper to taste. Remember that imitation crab meat comes with some salt added, so adjust accordingly.

  4. Step 4

Pour the mixture into a pie crust, either home made or ready made, but always uncooked. Spread out the solid parts of the mixture so that it is distributed along the bottom of the entire crust.

  5. Step 5

Sprinkle a little cheese on the top of the quiche to give it a bit of a top, which will cook and brown nicely in the oven.

  6. Step 6

Place your cocktail quiche in the oven to bake at 350 degrees for at least 30 minutes, or until it is completely cooked. Stick a fork or knife in the center and if it comes out clean, it's done.

Tips & Warnings
  • If you don't have access to real crab meat at your local supermarket you can always use imitation crab meat. It's more moist and only a touch less flavorful. Remember to keep it in clumps instead of flaking it.
  • Some people can be deathly allergic to shellfish, so be sure you find out if everyone can eat a cocktail quiche before you make one. You can also substitute the crab and shrimp with cod, salmon or other fish.
