Things You'll Need:
- 2 tsp. baking soda
- 1 tsp. cloves
- 1 tsp. nutmeg
- 3/4 cup cooking oil
- 1 can pumpkin (not pumpkin pie mix!!)
- 8 small loaf pans, or 3 regular size loaf pans (glass or metal)
- 1/2 tsp. cinnamon
- 2/3 cup water
- 3 1/2 cups unbleached white, wheat or a mixture of flour

Step 1
Preheat oven to 325 degrees F and get out your mini loaf or regular pans to prepare to bake your pumpkin bread.

Combine all ingredients--except the flour and pumpkin--with electric mixer.

Slowly add in either whole wheat, half and half or unbleached white flour and alternate with pumpkin in large mixing bowl. Let the mixer rest in between flour and pumpkin.

Pour into either three normal size baking loaf pans OR up to eight small/mini loaf pans. If you use mini loaf pans to bake your egg free pumpkin bread, you will have to adjust the time to bake the bread to about 30 or 35 minutes compared to the full hour as seen in the next step.

Bake at 325 F for 35 min for small loaves--or for 55-60 min for regular size loaf pan. But keep an eye on them in the oven; cooking times can vary. Test it with a knife, which should come clean if it's ready. Remove from pans after a few minutes. Let it cool.

Wrap in foil, put in freezer or serve when cooled. Mini-loaves make great gifts! And no allergens to worry about! They'll never miss the eggs! Enjoy!

on 11/20/2008 Hi Thanks for posting this recipe. First time I am trying eggless pumpkin bread. I was surprise there was no sugar in it. But I went along with the recipe. I added raisains which tasted great! Great Recipe!
