What's better on a Sunday morning than a fresh, perfect omelet? Being able to impress your friends and loved ones by doing it yourself. I used to watch the omelet chefs in the buffet line, envious of their skill. But, with only a few tricks up my sleeve, I have perfected the art of dazzling my girlfriend with flying eggs. Read on to learn how.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • A small, shallow pan, or omelet pan
  • Olive oil
  • Butter
  • 2 eggs
  • A whisk, or fork
  • A bowl
  • A flexible spatula
  1. Step 1

Put your pan on your range, stove or hot plate on low heat. Add a small amount of oil, then a small amount of butter, and let them melt together.

  2. Step 2

Crack your eggs in the bowl and beat them with the whisk or fork until the yolk and white are completely blended.

  3. Step 3

When the pan is hot, slowly drizzle the beaten eggs onto the oil/butter mixture. Don't rush, or the egg will replace the oil at the bottom of the pan, and if your omelet sticks, it won't be an omelet for much longer. When all the egg is added, let it sit for a few minutes.

  4. Step 4

Once the egg has solidified on the bottom, use your spatula to raise a corner, then tip the pan to allow egg to flow underneath the omelet. You're getting ready to flip, and you want as little runny egg on the top as possible.

  5. Step 5

Now you're ready. Using the spatula, gently separate the corners from the pan, making sure no egg sticks to the bottom. Grip the pan handle and swirl the omelet around in a circular motion. It should slide around the pan pretty easily.

  6. Step 6

Move the pan back and forth, watching the omelet slide. When you feel comfortable with its movement, quickly move the pan forward, dip the front, and flick up the pan. The omelet will slide up and out of the pan. Quickly dip the pan again with another flick to catch the omelet. From here, it's a matter of throwing in your toppings, folding it over, and enjoying your perfect omelet.

Tips & Warnings
  • Some people add things to their scrambled eggs like milk and cottage cheese. For a perfect flipping omelet, just use eggs. They will stick together better if there is nothing added to them (besides seasoning, like salt and pepper).
  • This takes practice. Though I've never lost an entire omelet, I have missed a quarter of one or more in mid air. Also, sometimes, you will only succeed in folding the omelet over instead of flipping it.
  • Be patient. This isn't about strength, or big movements A little flick of the wrist is all it takes.
