How to Make Tabouleh

Tabouleh is a traditional Middle-Eastern dish that is easy to prepare and a great accompaniment to hummus, chickpea salad, meat or fish.

Instructions

Things You'll Need:

  • A large mixing bowl
  • A saucepan
  • A small frying pan
  • 2 lbs. of bulgur
  • 1½ cups of fresh lemon juice
  • 3 cucumbers
  • 8 tomatoes
  • 1 medium red onion
  • 2 garlic cloves, minced
  • 3 bunches of parsley
  • 5 tbs. of mint, minced
  • 2 cups (8 oz.) crumbled feta
  • 1½ cups olive oil
  • 6 cups hot water
  1. Step 1

    Boil water in saucepan.

  2. Step 2

    Pour the bulgur into a large mixing bowl. Pour the boiling water and lemon juice over the bulgur and mix. Let stand 30 to 40 minutes; drain liquid.

  3. Step 3

    Prepare all vegetables.

  4. Step 4

    Toast pine nuts in frying pan until golden brown, a couple of minutes.

  5. Step 5

    In bowl, mix garlic, mustard, lemon juice and olive oil.

  6. Step 6

    Add beans, cooked carrots, onion and toasted pine nuts. Stir in crumble goat cheese. Add parsley on top.

Tips & Warnings
  • This salad is an excellent addition to a summer lunch or dinner and can be made a day in advance and stored in a tightly sealed container.
  • Serve tabouleh with toasted pita bread as a delicious accompaniment.
