How to Make Pistachio Ice Cream

Pistachio ice cream is a popular Indian dessert that is commonly known as 'Kulfi.' It's a simple and light dessert that is the perfect ending to a spicy meal. Pistachios have a distinct flavor and appearance, and give the ice cream a light green color. If you want to try a new dessert or ice cream treat, here's what you need to make pistachio ice cream.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 4 cups whole milk
  • 1/3 cup white sugar
  • 1/4 tsp. powdered saffron
  • 1/4 cup heavy whipping cream
  • 1 tsp. vanilla
  • 1/4 tsp. ground cardamom
  • 1/4 chopped pistachios (unsalted)

Step1
Prepare the milk. Bring the milk to a boil and then reduce the heat. Simmer for at least 45 minutes until the milk reduces in size.
Step2
Add the sugar. Stir in the sugar and cook for at least 3 minutes until dissolved. Stir in the saffron powder and mix thoroughly.
Step3
Transfer milk to refrigerator. Pour the milk mixture into a large bowl and refrigerate for at least 2 hours until cooled completely.
Step4
Add the cream. Stir in the heavy cream, vanilla and cardamom. Mixture will start to thicken. Fold in the chopped pistachios and pour back into large container.
Step5
Freeze for at least 4 hours until set.

Tips & Warnings

  • You can make these in small plastic cups and freeze them for individual servings
  • Garnish with a few pieces of chopped pistachios
  • Powdered saffron can be found at many ethnic grocery stores
