If you are having trouble with the meringue pulling away from the crust, here is an easy way to fix the problem.

From Quick Guide: Baking Techniques
Difficulty: Easy
Instructions
  1. Step 1

    Bake pie as instructed.

  2. Step 2

Spread meringue over the baked pie while the pie is still hot. The heat from the filling helps to cook the meringue. The meringue should cover the filling completely so it touches the entire crust edge.

  3. Step 3

Turn the oven to broil. When the oven is hot, place the pie under the broiler, with the oven door cracked, for approximately 3 minutes or until the meringue peaks are light brown.

  4. Step 4

Cut with a cold knife. Serve immediately.

Tips & Warnings
  • This method should also help if the meringue weeps.
