This side dish will blend well with any meal, but is particularly special at your holiday dinner table. The sweet and seasonal pumpkin spice gives regular baby carrots a new twist and may entice even the pickiest of eaters!

From Quick Guide: Vegetarian Thanksgiving
Difficulty: Easy
Instructions

Things You'll Need:

  • baby carrots or carrot slices/chunks
  • nutmeg
  • cinnamon
  • cloves (or just use pumpkin pie spice instead of the three separates)
  • sugar
  • apple juice
  • pot
  1. Step 1

    Pour carrots in pot.

  2. Step 2

Depending on how many carrots, add enough apple juice to cover the bottom of the pot (juice is used instead of water to steam the carrots, so estimate one half cup of juice for one medium bag of baby carrots).

  3. Step 3

Add a few pinches of each spice or about a teaspoon of pumpkin pie spice and stir.

  4. Step 4

Turn up the heat. As you bring the juice to a boil, sprinkle in a few dashes of sugar (the way you would salt boiling water).

  5. Step 5

Bring to a boil, then lower heat and simmer/steam for roughly 8 minutes. Stir occasionally to keep the bottom carrots from becoming too soft.

Tips & Warnings
  • Season to taste! If you prefer less of a pumpkin pie spice flavor, skip step 3 and just sprinkle some cinnamon over the cooked carrots when you serve them.
  • Cooking time may vary. Check the carrots periodically to make sure they are as soft as you like them!
