How to Make Potato Bread

Using mashed potatoes in bread makes it very moist and allows it to retain its freshness well. This is an easy and convenient bread to make. The dough can be made in advance and refrigerated for up to 5 days.

Instructions

Things You'll Need:

  • 1 package active dry yeast
  • 1 1/2 cups warm water (110 to 115 degrees F)
  • 2 tbs. sugar
  • 3 tbs. margarine, softened
  • 2 eggs
  • 1 cup mashed potatoes, lukewarm
  • 6 to 6 1/2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp. salt
  • Skim milk as garnish
  1. Step 1

    Mix yeast and warm water in large bowl. Let stand for 5 minutes.

  2. Step 2

    Mix in sugar, margarine, eggs and mashed potatoes. Mix in 5 1/2 cups all-purpose flour, whole wheat flour and salt to make a soft dough. Mix in enough remaining 1 cup all-purpose flour to make smooth dough.

  3. Step 3

    Knead dough on floured surface until smooth and elastic, about five minutes. Place dough in greased bowl and let rise, covered, in warm place until doubled in size. This should take about 1 to 1 1/2 hours. Punch down dough.

  4. Step 4

    Divide dough into two equal pieces; shape into loaves and place in greased 9-by-5 inch loaf pans. Let stand, loosely covered, until double in size, about 45 minutes.

  5. Step 5

    Brush tops of loaves with milk, if using. Bake at 375 degrees F until loaves are golden and sound hollow when tapped, about 45 minutes. Remove pans and cool on wire racks.

  • This recipe makes two loaves (about 16 servings each).
