How to Make Homemade Cream Puffs

These cream puffs form the basis of an elegant dessert or an elegant appetizer, depending upon the filling. They can be as large or dainty as you want them. The bite-sized ones take longer, but they will save you money over the store-bought kind.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 1 c. water
  • 1/2 c. butter
  • 1 c. flour
  • 4 eggs
  • filling of your choice: rich custard, whipped cream, chocolate pudding or chicken salad

Step1
Preheat oven to 400 degrees F.
Step2
Heat water and butter to boiling in saucepan.
Step3
Stir in flour all at once, stirring until mixture forms into a ball., leaving sides of pan. This takes about one minute.
Step4
Beat in eggs one at a time. Beat until smooth after the addition of each egg.
Step5
Drop by tablespoon onto un-greased baking sheet. Bake 45 to 50 minutes until puffed and dry. Cool slowly.
Step6
Cut off tops and scoop out any soft dough. Fill with the filling of your choice and replace lid.

Tips & Warnings

  • Unfilled cream puffs can be made ahead and frozen until ready to fill and serve.
