How to Make Peanut Butter and Banana Muffins

Things You'll Need:

  • 1/4 c. tightly packed brown sugar
  • 1 tbsp. shortening
  • 1 tsp. vanilla
  • 1 tbsp. peanut butter
  • 1 ripened banana mashed
  • 2/3 c self-rising flour
  • 2/3 c quick-cooking oatmeal
  • 1 egg slightly beaten
  • 1/2c water

    Making muffins

  1. Step 1

    Preheat oven at 400 degrees F.

  2. Step 2

    Place muffin or cupcake papers in a muffin pan.

  3. Step 3

    Cream the brown sugar and shortening.

  4. Step 4

    Add vanilla and egg, stirring mixture until well blended.

  5. Step 5

    Mix in peanut butter.

  6. Step 6

    Alternate between banana and flour beginning and ending with the flour.

  7. Step 7

    Stir in oatmeal and water, mixing well.

  8. Step 8

    Fill muffin or cupcake papers to half full.

  9. Step 9

    Bake at 400 degrees Fahrenheit until tooth pick comes out clean or top of muffins spring back when lightly pressed. Makes approximately 12 muffins.
