How to Make Low Fat Alfredo Sauce

Alfredo sauce is known for its thick creamy texture and Parmesan cheese taste. It's also known for its extremely high fat content. This low fat version of alfredo sauce offers the same texture and taste without the guilt of excessive fat grams. Enjoy over traditional fettuccine noodles.

Things You'll Need:

  • 3 tbs. margarine
  • 1/4 cup all purpose flour
  • 2 1/2 cups skim milk
  • 1/4 cup parmesan cheese
  • 1/8 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  1. Step 1

    Melt margarine in medium saucepan and stir in flour.

  2. Step 2

    Cook over medium heat one minute, stirring occasionally.

  3. Step 3

    Stir in milk and heat to boiling. Boil, stirring constantly, until thickened, 1 or 2 minutes.

  4. Step 4

    Reduce heat to low and stir in cheese, nutmeg, salt and pepper. Cook 1 to 2 minutes.

  • This recipe makes 4 servings, about 1/2 cup each.

on 7/25/2008 It was great... Easy to make, and delicious. BUT, I would recommend 1/16 tsp of nutmeg, as it was a little overwhelming. I will defintitly be making it again for my family.

on 6/27/2008 The recipe for lowfat Alfredo sauce looks very good. I was wondering if I could double that recipe. And if so what amount of flour would I use,because I don't want it to be too pasty. thanks

on 2/19/2008 I will have to get my wife to try making this. We do homemade whole grain pizza and she likes alfredo on her side!
