How to Make Low-Calorie Microwave "Scalloped" Potatoes

Miss the scalloped potatoes you ate before you started your diet? Try this tasty substitute in your normal fare, and save the high-calorie type for rare special occasions. The best part about these potatoes is that not only are they low in calories, they are also quick and easy.

Instructions

Things You'll Need:

  • Raw potatoes to fill an 8 x 8 inch glass baking dish.
  • 1 to 2 Tbsp. butter
  • 1/4 c. chopped onion
  • salt and pepper to taste
  • 1/2 c. skim milk
  1. Step 1

    Scrub potatoes well, and slice them as thin as possible. For more nutrients, leave on the peelings.

  2. Step 2

    Grease the baking dish with the butter.

  3. Step 3

    Layer the potatoes in the dish, add a little chopped onion, salt and pepper to the top of each layer.

  4. Step 4

    Pour 1/2 c. milk over all.

  5. Step 5

    Cook in microwave on high for 15 minutes. Check for doneness by inserting fork into center. Cook additional few minutes if needed.
