How to Make Freezer Tomato Sauce

Enjoy the tomatoes from your garden year round via a basic tomato sauce right from your freezer. It forms the basis of sauces for pasta dishes, stuffed green peppers, cabbage rolls and much more.

Instructions

Things You'll Need:

  • 8 lb. tomatoes - 25 med.
  • 1 c. chopped green pepper
  • 1 med. onion
  • 1 tsp. celery seed
  • 1/4 tsp. cayenne pepper
  • 2 Tbsp. white vinegar
  • 1 Tbsp. sugar
  • 1 tsp. salt
  1. Step 1

    Cut out stem ends and quarter tomatoes in colander. Let stand to drain.

  2. Step 2

    In large saucepan, combine tomatoes, green pepper, onions, celery seed and cayenne. Bring to boil.

  3. Step 3

    Lower heat and simmer for 40 to 45 minutes, stirring occasionally.

  4. Step 4

    Sieve the mixture.

  5. Step 5

    Add vinegar, sugar and salt. Then, return to boil.

  6. Step 6

    Lower heat again and simmer another 30 minutes or until desired thickness is reached.

  7. Step 7

    Ladle into clean, sterilized freezer containers, leaving room at top for expansion. Label and store in freezer.

Tips & Warnings
  • This same recipe can be ladled into canning jars and processed in a water bath for 10 minutes if you prefer canned foods.
