How to Make Freezer Tomato Sauce

Enjoy the tomatoes from your garden year round via a basic tomato sauce right from your freezer. It forms the basis of sauces for pasta dishes, stuffed green peppers, cabbage rolls and much more. Does this Spark an idea?

Things You'll Need

  • 8 lb. tomatoes - 25 med.
  • 1 c. chopped green pepper
  • 1 med. onion
  • 1 tsp. celery seed
  • 1/4 tsp. cayenne pepper
  • 2 Tbsp. white vinegar
  • 1 Tbsp. sugar
  • 1 tsp. salt

Instructions

      Cut out stem ends and quarter tomatoes in colander. Let stand to drain.

      In large saucepan, combine tomatoes, green pepper, onions, celery seed and cayenne. Bring to boil.

      Lower heat and simmer for 40 to 45 minutes, stirring occasionally.

      Sieve the mixture.

      Add vinegar, sugar and salt. Then, return to boil.

      Lower heat again and simmer another 30 minutes or until desired thickness is reached.

      Ladle into clean, sterilized freezer containers, leaving room at top for expansion. Label and store in freezer.

Tips & Warnings

  • This same recipe can be ladled into canning jars and processed in a water bath for 10 minutes if you prefer canned foods.
