How to Make Vegetable Sausage Soup

Instructions
  1. Step 1

    Gather your ingredients. Ingredients for vegetable sausage soup are 1 lb. sweet Italian-style sausages cut into ½ inch pieces, 1 tbsp. vegetable oil, a 16 oz. can of stewed tomatoes, two 8 oz. cans tomato sauce,
    1 cup water, 2 tsp. beef bouillon granules, 2 tsp. sugar, 1 cup sliced carrots, 1 cup quartered and thinly sliced onion, 1 cup sliced celery, 1 cup sliced zucchini, ¼ cup minced parsley, ½ tsp. dried Italian herb seasoning and grated Parmesan cheese (optional).

  2. Step 2

    In a large saucepan cook sausage in oil until brown. Remove from heat and set aside when done. Drain off fat.

  3. Step 3

    Place tomatoes, tomato sauce, bouillon, water and sugar in large saucepan. Bring to boil over medium heat. Add carrots, onion, celery, zucchini, parsley and herb seasoning. Return to boil, reduce heat to low and simmer for 10 minutes.

  4. Step 4

    Add sausage and simmer 10 to 15 minutes longer, stirring every so often. Serve in bowls or mugs with cheese.
