The United States is the fifth-leading potato producer in the world, according to FoodReference.com, producing nearly 18 million tons a year. While there are plenty of ways to use potatoes, one that is particularly suited to cool weather is old fashioned potato soup. Does this Spark an idea?

Things You'll Need

  • 2 cups sliced potatoes
  • 1/4 cup chopped onions
  • 1/3 cup chopped celery
  • 3 1/2 cups water
  • Salt and pepper to taste
  • 1/2 cup dry milk
  • 1 tablespoon butter
  • Cooking pot
  • Bowl

Instructions

      Boil the potatoes, onions, celery and 3 cups of water in a pot for 20 minutes.

      Mix the dry milk and remaining water in a separate bowl.

      Drain the liquid from the pot and measure it. There should be 1 ½ cups; if not, add water.

      Break the potatoes into small pieces and stir in the milk mix and liquid drained in the previous step.

      Add the butter and heat. Serve hot. This recipe makes four servings.
