I got this recipe from an Israeli friend who is a wonderful cook. It's a favorite among my family and friends.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 2 tbsp olive oil
  • 8 boneless chicken thighs
  • 1/4 tsp salt
  • Fresh ground pepper
  • 1 med onion, chopped
  • 2 med cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 3 tbsps honey
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp cayenne pepper
  • 2 cups water
  • 1 cup couscous

Step1
In large skillet, heat 1 tbsp oil over med heat. Add chicken and sprinkle lightly with 1/8 tsp salt and add the pepper to taste; saute for a few minutes unitl brown. Remove from pan.
Step2
Add 1 tsp oil to pan, add onion and garlic until softened. Stir in tomato sauce, honey, cinnamon, ginger, and cayenne pepper. Simmer 5 minutes.
Step3
Put chicken back in pan and coat with the sauce. Cover and simmer 30 minutes. Baste with sauce. Uncover and simmer 10 mins to thicken the sauce.
Step4
In a med saucepan, bring the water and 1/8 tsp salt to a boil. Stir in the couscous and bring back to a boil. Cover and remove from the heat and seat aside for 5 mins. Fluff with fork
Step5
Serve chicken and sauce over the couscous. Yum, yum!
