  • 2 small bowls
  • 3 ounces (½ cup) dried apricots, halved
  • 1 package (9 to 10 oz) fresh spinach and/or Italian salad mix
  • 1 cup seedless green grapes, halved
  • ½ cup chopped walnuts, toasted
  • ¼ cup thinly sliced red onion
  • 1/3 cup apricot preserves
  • ¼ cup red wine vinegar
  • 3 Tbsp vegetable oil
  • ½ tsp salt
  • Freshly ground black pepper, to taste
  1. Step 1

    Step one for making apricot spinach salad with this recipe is in small bowl, pour 1 cup boiling water over dried apricots; let stand 10 minutes.
