One of my favorite oatmeal cookie recipes. Great if you like apricots. Not straight oatmeal cookies, but the apricot twist is a good one! Does this Spark an idea?

  • baking sheet
  • 1 1/2 sticks butter
  • 1/2 cup sugar
  • 1/2 cup light brown sugar, firmly packed
  • 1 egg
  • 1 cup flour
  • 1 tsp baking soda
  • 2 cups quick cooking oats
  • 1 2/3 cups (10 oz pkg) white baking chips
  • 3/4 cup dried apricots (chopped)
