One of my favorite oatmeal cookie recipes. Great if you like apricots. Not straight oatmeal cookies, but the apricot twist is a good one!

Instructions

Things You'll Need:

  • Electric mixer / beater
  • baking sheet
  • 1 1/2 sticks butter
  • 1/2 cup sugar
  • 1/2 cup light brown sugar, firmly packed
  • 1 egg
  • 1 cup flour
  • 1 tsp baking soda
  • 2 cups quick cooking oats
  • 1 2/3 cups (10 oz pkg) white baking chips
  • 3/4 cup dried apricots (chopped)
  1. Step 1

    Step one in making apricot oatmeal cookies with this recipe is to heat oven to 375 degrees.

  2. Step 2

    Step two in making apricot oatmeal cookies with this recipe is to beat butter and sugars in a large bowl on medium speed of mixer until fluffy. Add egg; beat well.

  3. Step 3

    Add flour and baking soda; beat on low speed until combined.

  4. Step 4

    By hand, stir in oats, white chips and apricots (dough will be stiff).

  5. Step 5

    Drop dough by teaspoons 2 inches apart onto an ungreased baking sheet.

  6. Step 6

    Bake 7 to 9 minutes or just until lightly browned on the bottoms (do not overbake).

  7. Step 7

    The final step in making apricot oatmeal cookies with this recipe is let them cool 1 minute; remove from cookie sheet to wire rack and cool completely. This recipe makes 3 ½ to 4 dozen cookies.
