Place chicken breasts between 2 pieces of plastic wrap. Pound the chicken to an even thickness of about 1/4 inch.

Mix flour with salt and pepper. Dip each breast in flour mixture, then in egg, and finally coat with almonds.

In large skillet, heat half the oil over medium heat. Cook chicken, turning once, about 5 minutes on each side until golden and no longer pink inside. Remove from pan and keep warm on platter.

Heat remaining oil in same pan. Cook unpeeled peaches 1 minute.

Stir in wine. Bring to boil. Cook 3 minutes to reduce liquid. Stir in heavy whipping cream, bleu cheese, salt and pepper to taste. Cook and stir until thickened.
