How to Make Eggplant and Goat Cheese Rolls

This is a delicious, unique appetizer that will wow your friends, family and party guests. Read on to learn how to make eggplant and goat cheese rolls.

Instructions

Things You'll Need:

  • 2 medium sized eggplants
  • 1 large tube of goat cheese
  • Cooking spray
  • Onion powder
  • Thyme
  • Salt
  • Olive oil
  • Baking pan
  • Decorative toothpicks
  1. Step 1

    Wash eggplant and cut off a bit of the top and bottom.

  2. Step 2

    Carefully peel skin.

  3. Step 3

    Slice long ways, about half-inch thick slices.

  4. Step 4

    Lightly salt eggplant and let sit for a half hour to get rid of any bitterness.

  5. Step 5

    Spray baking pan with non-stick spray. Brush eggplant on both sides with olive oil. Broil on low.

  6. Step 6

    Meanwhile, put goat cheese in a bowl. Add enough oil to make a paste-like substance. Add onion powder and thyme to taste.

    Flip eggplant over and broil until soft and lightly brown.

  8. Step 8

    Remove eggplant, place on plate and let cool.

  9. Step 9

    Take a tsp. of your goat cheese mixture and place on one end of a slice of eggplant. Roll and complete with toothpick. Enjoy.

Tips & Warnings
  • Wait until eggplant cools before inserting goat cheese.
  • Don't overcook the eggplant.
  • Don't use too much oil in the goat cheese mixture. It will be soggy.
