How to Make Frittelle

Frittelle is the typical Fat Tuesday sweet. In the States they are called fritter. During Carnevale in Italy everybody eats them at least once. You can find many variation to this recipe.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 1 1/3 Cup of flour
  • 2 eggs
  • 3 tbsp sugar
  • Lemon zest
  • 4 tbsp of brandy
  • ½ Cup of lukewarm milk
  • 1 tsp of powder yeast
  • 2 oz of raisin
  • Confectioners’ sugar
  • Oil to fry
  • Salt

Step1
Soak the raisin in lukewarm water with two tbsp of brandy.
Step2
In a bowl mix the eggs with the sugar, the lemon zest, the rest of the brandy, the milk and a pinch of salt.
Step3
Add the flower mixed to the yeast a bit at the time.
Step4
Drain and squeeze the liquid off the raisins and add them to the mixture.
Step5
Cover the dough with a cloth for the time necessary to heat the oil.
Step6
Place the dough a spoonful at the time in the boiling oil, paying attention not to splatter and get burned.
Step7
Once they have a golden look drain them with a slotted spoon and place them on paper towels to dry.
Step8
Sprinkle them with confectioner’s sugar and serve warm

Tips & Warnings

  • Perfect for parties and potluck
  • Fried oil always gives a strange smell to the home. Once you are done with the fritters drop half an apple on the hot oil so it doesn’t keep on burning itself and the apple gives the house a nicer smell.
  • Always vent your home well when deep frying anything.
  • Move the hot oil till it is cold away from the edge of the stove so people or children don’t accidentally bump into it and get severely burned.
