How to Make Filled Crespelle

Crespelle is the Italian word for the crepes and this recipe works great when you throw a large dinner party. The crepes can be made in advance and whipped together right before your guests arrive.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 10 oz. frozen spinach
  • 15 oz. ricotta
  • 2 cups shredded mozzarella
  • 1 can (15 oz) petite cut tomatoes
  • Grated parmesan cheese
  • Butter
  • A bunch of fresh or frozen parsley
  • 1 glass or ceramic casserole baking dish
Step1
Make basic crepes (see the eHow, "How to Make Basic Crepes") but without the sugar.
Step2
Preheat the oven at 350 F.
Step3
Defrost the spinach by cooking them in the microwave for 2 minutes.
Step4
Drain the spinach and chop it into small pieces. Mix it in a bowl with half the ricotta and chopped parsley.
Step5
In another bow, mix the rest of the ricotta with the mozzarella and chopped parsley.
Step6
Use the two different filling and place in centre of crepes and roll them close, to look like cannelloni.
Step7
Place the crepes next to each other in a buttered casserole dish.
Step8
Cut the tomatoes into small chunks and mix with olive oil Cover the crepes with them and top with the grated parmesan cheese.
Step9
Place in the oven uncovered for about 30 minutes.
Step10
Crack the oven open and let it stand 15 minutes before serving.
