How to Make Sweet Potato Spoonbread

A variation on the popular spoonbread, sweet potato spoonbread gives a different flavor to a favorite. Here's how to make it.

Instructions

Things You'll Need:

  • 2 cups water 1 cup cornmeal 1 tbsp. orange juice 4 eggs, separated ½ t. cream of tartar 1 (16-oz) can sweet potatoes, drained and mashed 1/3 cup sugar 1 t. baking powder ½ t. salt ¼ t. ground
  1. Step 1

    In saucepan, stir water and cornmeal. Cook over medium heat, stir until mixture boils and thickens. Stir in OJ, set aside.

  2. Step 2

    In mixing bowl at high speed, beat egg whites with cream of tartar until stiff. In larger mixing bowl, beat together egg yolks, sweet potatoes, sugar, baking powder, salt, and nutmeg. Beat in reserved cornmeal mixture until blended together. Fold yolk mixture into the whites.

  3. Step 3

    Pour into a greased 2-quart baking dish and bake at 350 until puffy and brown, about 50-60 minutes. Serve immediately.
