Things You'll Need:
- 3 cups confectioner's sugar
- 1 cup butter
- 1 teaspoon pure vanilla extract
- 4 tbps heavy whipping cream
- 1 banana, cut into slices
-
Step 1
Spoon cake mix into cupcake liners and bake according to instructions. While you wait for the cupcakes to bake, you can make your filling.
-
Step 2
Make your filling: Take 3 tablespoons of whipping cream out of the container and set it to the side. Pour the remainder of the whipping cream into a bowl and add sugar. Whip with an electric mixer until soft peaks form. Spoon in peanut butter, and continue to whip until smooth. Load the peanut butter cream into your pastry bag, using the most pointy nozzle.
-
Step 3
When the cupcakes are done and have cooled, insert the nozzle into the cupcake from the top and slowly squeeze the cream filling into the center, being careful not to put too much. We don't want any exploding cupcakes!
-
Step 4
Once your cupcakes are all filled, top them with your favorite frosting. Or, you can try some Banana Buttercream frosting. See the steps below to make it.
-
Step 1
Whip butter and sugar until creamed. Add vanilla and whipping cream. If you feel the need to add more whipping cream, add it by the teaspoon, testing the frosting's consistency every few seconds.
-
Step 2
Using a fork, mash your banana down in a separate bowl.
-
Step 3
Add the banana to the frosting mixture, whipping until thoroughly incorporated. When done, spread onto your cupcakes and enjoy!
