How to Make a British Strawberry Fool

Fruit fool has been served in England since the early 16th century, a simple mixture of fruit, cream, and sugar that is a wonderful dessert year round. It's naturally served chilled, and can be a decorative dessert when served in tall parfait or martini glasses. The term 'fool' was derived form the French word to 'mash' or puree. If you're anxious to try something new at the dessert table, here's how to make a British Strawberry Fool of your own!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1 pound frozen strawberries
  • 1/2 cup white sugar
  • 1 cup heavy whipping cream

Step1
Prepare the strawberry puree. Thaw the frozen strawberries and place in a food processor to blend. Puree on medium speed until no chunks remain.
Step2
Finish the puree. Add 1/3 cup of white sugar to the strawberries and mix until well blended.
Step3
Refrigerate the puree. Refrigerate the strawberry puree for at least 6-8 hours, preferably overnight.
Step4
Prepare the whipped cream. Whip the heavy cream on medium speed until soft peaks form.
Step5
Add the sugar. Add remaining sugar until a stiff and light whipped cream forms.
Step6
Fold in the strawberry puree. Slowly fold the refrigerated puree into the whipped cream.
Step7
Prepare to serve. Serve in chilled parfait or martini glasses, and garnish with fresh strawberries. Enjoy!

  • You can layer different types of fruit purees for variation
  • Refrigerate pre-portioned fools individually until ready to serve
