How to Make PB&J Cookies

If you love cookies and love peanut butter and jelly, this cookie is the best of both worlds. Enjoy with a large glass of milk and a cartoon. What good is life if you can't indulge your inner child every now and again?

Instructions

Difficulty: Easy

Things You’ll Need:

  • Grape or Strawberry Jam
  • ¾ cup all purpose flour, sifted
  • ¾ tsp. salt
  • ⅓ cup sugar
  • ½ cup peanut butter, creamy or chunky
  • ½ stick unsalted butter, softened
  • 1 tbs. vanilla
  • 1 tbs. honey
Step1
Preheat oven to 375 degrees F.
Step2
In a bowl, whisk together all of your dry ingredients. In a second bowl, beat butter and peanut butter until smooth, adding the egg, honey and vanilla gradually. Finally, mix in dry ingredients until fully blended.
Step3
Using a tablespoon, drop cookie dough by the spoonful onto a lightly greased cookie sheet, about 2 inches apart. Press the cookie down slightly, making an indentation with your thumb in the center. Bake for 8-10 minutes then take the cookies out.
Step4
Working quickly, carefully drop of ¼ tsp of jam into the indentations, then bake approximately 5-7 minutes longer or until golden.

Tips & Warnings

  • Let a freshly baked batch cool, then take two and spoon some ice cream in between for a sweeter treat!
