How to Make a Turkey Frittata

Cooking a whole turkey almost guarantees left over turkey meat. Sandwiches are always a choice, but cooking a Turkey Frittata will give your family something different and can be served for any meal.

Instructions

Things You'll Need:

  • 1 – 1 1/2 cups chopped turkey
  • 6 Eggs, beaten
  • 1 green pepper, coarsely chopped
  • 1 onion coarsely chopped
  • 1 tsp. Minced garlic
  • 2 tbs. Butter, margarine or Olive Oil
  • 1/2 cup Cheddar or other hard cheese
  • Large skillet with lid
  1. Step 1

    Chop turkey into bite size pieces and set aside. Chop pepper, onion and garlic.

  2. Step 2

    Heat butter, margarine or olive oil in skillet. Add the vegetables and sauté until tender.

  3. Step 3

    Add turkey and sauté until lightly browned.

  4. Step 4

    Beat six eggs together in a bowl until well blended and frothy. Add to the skillet, tipping the skillet as necessary to evenly coat the bottom and the veggies.

  5. Step 5

    Place lid on skillet and turn the heat down to a low simmer. Cook until egg is set throughout.

  6. Step 6

    To serve, turn finished frittata onto serving platter. Sprinkle with ½ cup Cheddar or other hard cheese and cut into wedges.

Tips & Warnings
  • Serve with green salad and fresh bread for a complete dinner meal.
  • Any variety of vegetables can be used in a frittata; the choices are up to the cook. Broccoli, cauliflower and potatoes are always good.
  • Frittatas are great for brown bag lunches as they hold their shape and can be eaten hot or cold.
  • Chicken, seafood or other meat can be substituted for the turkey.
  • To stretch the number of servings of a frittata, cook in a Dutch oven and add pre-cooked pasta.
  • Cook the frittata slowly as heating too quickly will cause a burned bottom and uncooked top.
  • Always cook egg dishes thoroughly to avoid any instance of salmonella.
