Things You'll Need:
- 1 – 1 1/2 cups chopped turkey
- 6 Eggs, beaten
- 1 green pepper, coarsely chopped
- 1 onion coarsely chopped
- 1 tsp. Minced garlic
- 2 tbs. Butter, margarine or Olive Oil
- 1/2 cup Cheddar or other hard cheese
- Large skillet with lid

Step 1
Chop turkey into bite size pieces and set aside. Chop pepper, onion and garlic.

Heat butter, margarine or olive oil in skillet. Add the vegetables and sauté until tender.

Add turkey and sauté until lightly browned.

Beat six eggs together in a bowl until well blended and frothy. Add to the skillet, tipping the skillet as necessary to evenly coat the bottom and the veggies.

Place lid on skillet and turn the heat down to a low simmer. Cook until egg is set throughout.

To serve, turn finished frittata onto serving platter. Sprinkle with ½ cup Cheddar or other hard cheese and cut into wedges.
