How to Make Low Carb Quesadillas

Following a low carb diet can make it challenging to enjoy some classic recipes, but quesadillas don't need to be disappear from your weekly menu! Low carb quesadillas are easy to make and require only a few ingredients. Since you have freedom to fill them up with quality protein, they can be particularly diet-friendly for low carbers. Here's how to make low carb quesadillas.

Things You'll Need:

  • 6 low carb tortillas
  • 3 tablespoons salsa
  • 1/4 cup Shredded Mexican cheese
  • 1/4 cup shredded Pepper Jack Cheese
  • 2 tablespoons canola oil
  • 1 package grilled chicken strips
  • 4 oz. full-fat cream cheese
  • Salt and pepper to taste
  1. Step 1

    Prepare first layer of tortillas. Lay out two tortillas on flat surface and top with one layer of cream cheese, a pinch of salt and sugar, and one tablespoon salsa.

  2. Step 2

    Prepare second layer of tortillas. Place one fresh tortilla on the cream cheese layer, and press gently. Cover with 1/4 cup shredded pepper jack cheese and grilled chicken strips. Top with remaining salsa.

  3. Step 3

    Prepare third layer of tortillas. Place one fresh tortilla on each of chicken layer, and press down firmly. Brush entire surface with a teaspoon of canola oil.

  4. Step 4

    Lightly fry the quesadillas. Heat the canola oil in a frying pan and lightly fry quesadillas until cheese is melted and the sides are crispy.

  5. Step 5

    Add cheese. Sprinkle the Mexican cheese on entire quesadilla while hot, and microwave again for 30 seconds until melted.

  6. Step 6

    Cut into triangles, and serve!

Tips & Warnings
  • Quesadillas can be served with sour cream and/or salsa
  • Try different types of cheese according to taste
  • Low carb tortillas can be found in the specialty food aisle of most grocery stores
  • This recipe makes two large quesadillas that can be a meal, or an appetizer
  • Read the labels of all ingredients to make sure they are low in carbs
