Pumpkin isn't just for pie anymore!In fact, why not enjoy fall's most festive food for breakfast? Here's a little holiday fare that will make pancake breakfast with your family something really special over the holidays.

Instructions

Things You'll Need:

  • 1 cup flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (other spices optional - see tips below)
  • 1/2 cup canned pumpkin
  • 2 eggs, separated
  • 2 tablespoons melted butter or margarine
  • applesauce / syrup / honey / or hot cider sauce
  • For the hot cider sauce you will need:
  • 3/4 cup apple juice or apple cider
  • 1/2 cup brown sugar
  • 1/2 cup light corn syrup
  • 2 Tablespoons butter
  • 1/2 teaspoon lemon juice
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  1. Step 1

    Sift together the flour, sugar, baking powder, salt, and cinnamon.

  2. Step 2

    Slightly beat the 2 egg yolk and combine with the pumkin and melted butter. Add this mixture to the dry ingredients.

  3. Step 3

    Beat the 2 egg whites until stiff, and fold into the batter.

  4. Step 4

    Cook pancakes in hot, slightly greased skillet, using approximately 1/3 cup of batter per pancake. Makes 8. Serve with your choice of toppings: applesauce, syrup, honey, or the delicious hot cider sauce below.

  5. Step 5

    For the hot cider sauce, combine the apple juice or apple cider, brown sugar, light corn syrup, butter, lemon juice, cinnamon, and nutmeg. Bring to a boil and simmer for 15 minutes. Makes 1 1/4 cup of sauce.

Tips & Warnings
  • If you like other spices with your pumpkin pancakes, try adding a dash of nutmeg, allspice, and cloves; or, use pumpkin pie spice in lieu of the cinnamon.
