Got some leftover pumpkin you don’t know what to do with? Or perhaps you’re looking for an easy yet unique breakfast for the day after Thanksgiving? These pumpkin pancakes are just the ticket.

Instructions

Things You'll Need:

  • 2 cups flour
  • 1 tablespoon sugar
  • 1 tablespoon brown sugar
  • 1 tablespoon baking powder
  • 1 ¼ teaspoons pumpkin pie spice
  • 1 teaspoon salt
  • 1 ½ cups milk
  • 1 egg
  • 3 tablespoons melted butter
  1. Step 1

    Wisk dry ingredients together in a medium sized bowl. Set aside.

  2. Step 2

    In the bowl of a mixer, beat milk, pumpkin, egg, and butter.

  3. Step 3

    Gradually add dry ingredients. Mix on the second lowest setting until just incorporated.

  4. Step 4

    Drop about ½ cups worth of batter onto hot frying pan or griddle. Cook until top begins to bubble. Flip and cook other side.

  5. Step 5

    Serve with maple sausage links and hot maple syrup.
