This recipe for Low Fat Pumpkin Oatmeal Cookies is a great seasonal and healthy snack. Kids and parents alike will love them!

Things You'll Need:

  • 1 c. pumpkin
  • 2 egg whites, whipped
  • 1 c. brown sugar, packed
  • 1 1/2 c. all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cloves
  • 3 c. rolled oats
  • 1 c. raisins
  1. Step 1

    Spray baking sheet with cooking spray.

  2. Step 2

    Combine pumpkin and egg whites in a large bowl.

    In a separate bowl, combine sugar, flour, cinnaman, baking soda, nutmeg, cloves, oats, and raisins. Mix the ingredients together until moistened.

    Place cookies by the tablespoonfuls onto a prepared baking sheet. Make sure the cookies are 2" apart. The cookies may be left in round balls or flattened out with the bottom of a glass. If you leave the cookies in a ball, the baked cookie will be--you guessed it!--a ball.

    Bake at 350 degrees for 15 minutes.
