How to make DELICIOUS yet simple Indian dish – Pulao (spicy vegetarian rice dish)

Spice up your thanksgiving oe any other occasion with a simple vegetarian rice dish called Pulao. It's quick and very delicious.

Instructions

Things You'll Need:

  • Basmati rice (1 cup)
  • Mixed vegetables (or fresh cut French beans and carrots, peas) – (3 cups)
  • Golden raisins (3 tbsp)
  • Sliced almonds (2 tbsp)
  • Halved cashews (3 tbsp)
  • (Opt)Cinnamon sticks (2)
  • (Opt) Cumin seeds (1 tsp)
  • (Opt)Whole green cardamoms (6)
  • (Opt) Bay leaves (3)
  • (Opt) Whole black cardamom (2)
  • Fresh chopped cilantro (1 big bunch)
  • Fresh chopped mint (1 bunch)
  • Fresh garlic (10 cloves)
  • Fresh ginger (2 inches)
  • Green chillies/ Jalapeño (according to taste)
  • Salt to taste
  • Oil or Ghee (Indian clarified butter (3 tbsp)
  • Hot water (4 cups)
  1. Step 1

    Grind ginger, garlic and green chillies/jalapeño into a fine paste, keep aside

  2. Step 2

    Wash basmati rice, drain it and keep aside

  3. Step 3

    Heat oil/ghee on medium temperature and add cumin seeds and wait till they start sizzling

  4. Step 4

    Add cinnamon sticks, bay leaves, green cardamoms, black cardamoms and fry for a minute

  5. Step 5

    Add cashews, almonds and raisins and fry for another minute

  6. Step 6

    Add paste made out of ginger garlic and green chillies/jalapeños in step one and fry for a minute

  7. Step 7

    Add mixed vegetables and fry till half done

  8. Step 8

    Add rice along with chopped cilantro and mint. Add hot water and salt according to taste. Cook covered on low medium until rice is done.

Tips & Warnings
  • All optional items (Opt) in ingredients may be available at your local Indian grocery store
