How to Make Addictive Sweet Potato Burritos

My mother-in-law came up with the recipe years ago, and thought I'd share. It's a little different than most burrito recipes, but that's what makes it special.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3 tsp vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 6 cups cooked kidney beans, rinsed and drained
  • 2 cups water
  • 3 tbsp chili powder
  • 2 tsp ground cumin
  • 4 tsp prepared mustard
  • A pinch of cayenne
  • 3 tbsp soy sauce
  • 4 cups cooked sweet potatoes, mashed
  • 12 (10 inch) flour tortillas, warmed
  • 8 oz shredded Cheddar cheese
  1. Step 1

    Preheat oven to 350 degrees.

  2. Step 2

    Heal oil in a medium skillet. Saute onion and garlic until soft. Add the beans and mash together thoroughly.

  3. Step 3

    Gradually stir in water and heat until warm. Remove from heat and stir in the chili powder, cumin, mustard, cayenne, and soy sauce.

  4. Step 4

    Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese, and fold tortillas up - burrito style.

  5. Step 5

    Bake at 350 degrees for 12 minutes.

Tips & Warnings
  • These burritos can be made ahead of time, individually frozen then heated.
  • Can be served with sour cream, chopped green onions, and salsa.
  • For vegan burritos, omit the sour cream and cheese.
  • For an interesting variation, try deep-frying these tasty burritos!
  • Once you've had one, you'll crave another. Eat at your own risk. :)
