Turkish Delight is a wonderful treat, featured in "The Lion, The Witch, and the Wardrobe". I love it, and you should try it. You will love it too.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 4 cups of granulated sugar
  • 1 1/4 cup cornstarch
  • 1 tsp cream of tartar
  • 4 1/4 cups water
  • 1 1/2 tbsp rose water
  • 1 cup confectioners sugar
  • vegetable oil for greasing
  • candy thermometer

Step1
To make the Sugar Syrup, you need to combine the granulated sugar with a dash of lemon juice, along with 1/2 cup of water into a saucepan on the stove-top. Turn the heat on medium. Stir it until the sugar dissolves. When it boils, turn the heat down to low.
Step2
Insert the candy thermometer into the saucepan. Allow it to simmer until it reaches a temperature of 240 degrees F. Turn the heat off and set aside.
Step3
To make the Jelly Base, you first must combine the cream of tartar, 1 cup of cornstarch, and water. The heat should be on medium.
Step4
Continuously stir the mixture until all the lumps are out and it begins to boil. Stop stirring it once the mix acquires a glue-like consistency.
Step5
Add the mixture of lemon juice, sugar and water to the other and stir it in for approximately 5 minutes. Reduce the heat to low and let it simmer for 1 hour, but stir it consistently so that it doesn't burn to the bottom of the pan.
Step6
When it becomes a golden color, add in the rosewater and stir until everything is mixed well.
Step7
The next thing you need to do is pour the mix into a mold. Do whatever mold you choose. A plain rectangle is fine. Oil the bottom and sides of your container and spread the mix into the pan evenly. Place it in the refrigerator and allow it to cool overnight.
Step8
The next day you can take it out of the fridge and remove it from its mold. Cut it into 1 inch pieces.
Step9
Turkish Delight Place them all into a bowl of confectioners sugar and roll them around in it so that they get covered in it pretty well.

Tips & Warnings

  • You can store the Turkish Delight in an airtight container, but you should seperate the layers with wax paper or something like that.
  • Turkish Delight is a great holiday treat in my family. Make it one in yours as well!
