How to Make Fresh Tomato Salad

This light, delicious and healthy recipe is perfect as a side dish or snack in the spring, summer or anytime! Read on to learn how to make it.

Instructions

Things You'll Need:

  • 5 Fresh Heirloom (or any large, red) Tomatoes
  • 4 tbsp. Olive Oil
  • 4 tbsp. of Juice from Pickled Cherry and/or Bell Peppers
  • 1 Large White Onion
  • Salt and Pepper to taste
  1. Step 1

    Cut the tomatoes into thin slices.

  2. Step 2

    Chop the onion into slices.

  3. Step 3

    Place tomato pieces and onion into medium sized, shallow bowl or serving plate.

  4. Step 4

    Pour olive oil and pepper juice over tomato and onion. Sprinkle with salt and pepper. Toss together.

  5. Step 5

    Allow mixture to sit at room temperature and stew for approximately 30 minutes. The longer the mixture sits, the tomatoes will become more tender and the onions softer and more flavorful.

  6. Step 6

    Serve with large chunks of crusty Italian bread.

Tips & Warnings
  • Variation: Add one sliced cucumber.
