This holiday season add a bit of dessert to your main course! No one can resist the tempting aroma of baked sweet potatoes mingled with a brown sugar crust to compliment turkey or ham. One bite of this Sweet Potato Casserole and you'll be hooked for years to come-I know my family is! Add this popular dish to your holiday repetoire and enjoy the rave reviews from friends and family!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 4 Cups Mashed Sweet Potatoes (fresh)
  • 1 Cup Sugar
  • 2 eggs, lightly beaten
  • 1/2 Cup Half & Half
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/4 butter, softened
  • Topping
  • 3/4 Cup butter, melted
  • 1/2 Cup flour
  • 1 Cup packed light brown sugar
  • 1/3 Cup chopped pecans (optional)

Step1
To a bowl add 4 Cups mashed sweet potatoes. Add to the sweet potatoes sugar, eggs, half & half, vanilla, salt and butter.
Step2
With a hand held blender, whip/blend all ingrediants at medium speed until sweet potatoes are smooth and fluffy.
(A hand held masher is also ok for blending if you don't have a hand held/table top blender)
Step3
Pour sweet potato mixture into a lightly greased casserole dish.
Step4
In a small bowl, add "Topping" ingrediants together and blend. Add the wet topping mixture to the top of the sweet potatoes in a uniform layer.
Step5
Place casserole in preheated 350 degree oven. Bake for 35-45 minutes. You will notice it beginning to bubble. If the topping looks like it is becoming too dark, don't hesitate to add a piece of foil to cover until baking is completed.
Step6
Once dish is removed from oven, allow to sit for 10 minutes before serving. Enjoy!!

Tips & Warnings

  • To make the topping more of a "crumb" texture, cut butter in half, blend all ingrediants with a fork and crumble on top of the potatoes
  • Don't hesitate to make this dish more low calorie to fit dietary needs. Half & Half can be substituted for low fat or skim milk and the butter can be deleted from this dish without much sacrifice to taste.
  • Get the kids involved! Put them in charge of mashing the potatoes while you measure out the rest of the ingrediants.
  • This dish freezes well without the topping added. Complete steps 1 thru 3, add to an airtight container and freeze. When it's time to bake, allow to thaw, place in a baking dish and add topping ingrediants and bake as directed.
  • Warning: This dish may be requested repeatedly after the holidays. Have recipe cards available to hand out to friends and family.
