How to Make a Spinach Frittata

Frittatas are Spanish version of omelets. They are eaten hot or cold, as a meal on their own or cut into slices and served as the filling in a baguette. Easy and inexpensive to make, you can make many different variations of frittatas. It serves 4. Read on to learn more.

Things You'll Need:

  • 1 pound spinach
  • 2 tsp. water
  • 4 Eggs, beaten
  • 2 tbsp. cream
  • 2 cloves garlic, minced
  • ¼ cup canned sweet corn, drained
  • 1 jalapeno pepper, chopped into small pieces
  • 2 tomatoes, chopped into small pieces
  • 2 tbsp. olive oil
  • 2 tbsp. margarine
  • ¼ cup manchego cheese, cubed (pepper jack or cheddar will also work)
  • large frying pan
  • medium bowl

    How to Make a Spinach Frittata

  1. Step 1

    Steam the spinach for 5 minutes in 2 tsp. of water.

  2. Step 2

    Pat the spinach dry with a paper towel.

  3. Step 3

    Mix the eggs, spinach, sweet corn, jalapeno, cream, garlic and tomato in a bowl.

  4. Step 4

    Pour into the frying pan and add the cheese.

  5. Step 5

    Cook over a medium heat for about 7 minutes. Do not stir the mixture! Check periodically to make sure that the bottom hasn’t burned.

  6. Step 6

    Flip the frittata once the bottom has browned. The easiest way to do this is by putting a plate over the pan, holding it with one hand and flipping the pan with the other.

  7. Step 7

    Slide the frittata back into the pan, adding more oil if needed.

  8. Step 8

    Cook the other side for another 3 or 4 minutes.

  9. Step 9

    Serve immediately.

Tips & Warnings
  • Frittatas are great as a meal on their own, served with a side of warm fresh bread. Also, try them with Sopa de Tomate (Spanish Tomato soup) or Croquetas de Gambas (Shrimp Croquets) as tapas or Spanish appetizers, before Cashew Nut Paella. Sangria is a nice compliment to either.
