An unusual soup, this Sopa de Tomate is thickened with "pan de ajo," or garlic bread. It is a traditional soup in some areas of Spain. Because of the bread that added into the soup, freezing is not recommended. It serves 4. Read on for the recipe.

Instructions

Things You'll Need:

  • 4 tbsp. Spanish olive oil
  • 1 large onion, chopped into small pieces
  • 3 cloves garlic, minced
  • 1 large green bell pepper, chopped into small pieces
  • 1 tsp. chili powder
  • 4 cups tomatoes, chopped into small chunks
  • 1 medium Baguette French bread, cubed
  • 4 cups vegetable broth
  • large frying pan

    How to Make Spanish Sopa de Tomate

  1. Step 1

    Sauté the onion, garlic and peppers for 2 minutes.

  2. Step 2

    Add the tomatoes and chili powder.

  3. Step 3

    Cook over medium heat until mixture has thickened.

  4. Step 4

    Pour in vegetable stock and bread cubes.

  5. Step 5

    Cook for another 15 to 20 minutes or until soup is thick.

  6. Step 6

    Serve immediately.

Tips & Warnings
  • Sopa de Tomate served with fresh garlic bread is great for a meal. Or, try serving it as an appetizer before Tortilla Española or Cashew Nut Paella.
