How to Make a Simple Pot Roast Stew

While other pot roasts are delicious and may be simple, they may not include the veggies that make this version so wholesome. With carrots, mushrooms and potatoes, this pot roast will be tasty and healthy.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 3 to 4 pounds chuck roast
  • 2 cans cream of mushroom soup
  • 2 packages of onion soup mix
  • Carrots and potatoes, peeled and cubed
  • Button mushrooms
  • Tinfoil

Step1
Line a roasting pan with tinfoil. Make sure you have enough foil to cover the roast completely while it's in the oven.
Step2
Cut the chuck roast into bite-sized pieces. This is important to ensure that they cook for the right amount of time to be tender and juicy.
Step3
Mix the cream of mushroom soup with the onion soup mix.
Step4
Put the meat in the roasting pan. Scatter the carrots, potatoes and mushrooms around the meat.
Step5
Pour the soup mix over the meat and veggies so that everything is evenly covered.
Step6
Bake at 375 degrees for 1.5 to 2 hours, until the meat is very soft.

Tips & Warnings

  • Enjoy with soft bread or pour over rice.
