How to Make Plantation Cake

Plantation Cake is a southern classic, a simple coconut cake that is made with butter, sugar, sour cream and, of course, coconut! It is a moist and sweet cake that can be served with tea or coffee, but is best enjoyed with a tall glass of cold lemonade on a hot day in the South. Here's how to make a classic Plantation Cake.

Instructions

Things You'll Need:

  • 1 yellow butter cake mix package
  • 2/3 cup white sugar
  • 2/3 cup oil
  • 1 cup full-fat sour cream
  • 4 eggs
  • 1 small can of coconut
  • 1/2 cup powdered sugar
  • Tube pan
  1. Step 1

    Preheat the oven to 350 degrees Fahrenheit.

  2. Step 2

    Prepare the pan. Grease and flour the tube pan, and set aside.

  3. Step 3

    Prepare cake batter. Mix the yellow cake mix, sugar, oil and sour cream in a large bowl. Combine thoroughly.

  4. Step 4

    Add eggs one at a time and mix well.

  5. Step 5

    Add the coconut. Open the can of coconut and blend into cake batter. Mix thoroughly until batter is smooth.

  6. Step 6

    Bake for 60 minutes until cake is lightly brown and a toothpick inserted near the center comes out clean.

    Leave to cool in pan for 15 to 20 minutes.

    Invert onto a wire rack.

  9. Step 9

    Prepare icing. Mix together powdered sugar with a few tbs. of water until blended. Drizzle on top of cake.

Tips & Warnings
  • Use eggs and sour cream at room temperature for easy combining.
  • Coconut can be found in the ethnic or gourmet food aisles at the grocery store.
  • Duncan Hines and Betty Crocker cake mixes work well for this recipe.
  • Avoid overbaking by checking at 30 minute and 45 minute increments.
